Abstract
The detection of important analytes and microorganisms is still a challenge in food samples analysis. This chapter aims to cover the surface-enhanced Raman spectroscopy(SERS)as a sensitive analytical detection technique employing both label-free and labeled methodologies. After a brief introduction to SERS, the optimization strategies and the analytical performance of the SERS-based assays are presented. Along with the recent interesting quantitative and qualitative approaches, the obstacles pertaining to sample preparation and reproducibility to overcome the application of SERS in food samples are discussed.
